Butterfly Palmier

These Butterfly Palmiers are irresistibly crispy and light, making them the perfect snack that you can't stop eating one by one. With a delightful caramelized sugar coating and a delicate crunch, they are a treat for all ages!

What you need

Plain
Flour

Strong

What to Do

  • Mix the plain flour and strong flour together.
  • Chop the butter into pieces and add it to the flour. Mix the flour and butter together by hand, gently rubbing them until combined.
  • Add water, and continue mixing by hand until a dough forms. Wrap the dough in plastic wrap and refrigerate for 30 minutes. Well-mixed dough ready to be refrigerated
  • Roll the dough into a large sheet, then fold it into thirds. Refrigerate again for 30 minutes. Repeat this step two more times. Dough rolled into a large flat sheet
  • Roll the dough out into a large sheet again, then sprinkle with sugar. Roll the dough inward from both sides, with one side slightly larger than the other. Freeze for another 20 minutes, pressing the sugar lightly to help it adhere to the dough. Dough rolled up after sugar is added
  • Cut the rolled dough into pieces to form butterfly shapes. Butterfly-shaped dough cut from the main roll
  • Sprinkle more sugar on top before baking. Dough on baking tray ready for the oven
  • Preheat the oven to 240°C (464°F) for 3 minutes. Bake at 160°C (320°F) for 20 minutes. (Every oven is different, so you may need to adjust the time and temperature to suit your oven.) Well-baked Butterfly Palmiers
